Island Slice Rum was founded by Sylvester Herman, who grew up in a family with a strong rum-making tradition on the shores of Saltibus, St. Lucia.
Sylvester's love for rum developed from his childhood experiences of witnessing his father distil and sell homemade rum. His journey took him from St. Lucia to the United States Department of Defense and later to the British Army. In 2013, Sylvester found himself in Scotland, where he was inspired to create a rum that truly captured the essence of the Caribbean.
Combining his family's rum-making legacy with his own vibrant spirit, Sylvester established Island Slice in 2015. The distillery, located in Dalreoch, Dumbarton, is affectionately known as 'Rumbarton' and stands as a testament to Sylvester's dedication to blending the authentic flavours of St. Lucia with the Scottish landscape.
Island Slice offers a laid-back dark rum that embodies indulgence and sophistication. The dark rum features a toffee aroma and taste, accompanied by notes of aged cedar humidor on the palate. The influence of specially selected Speyside whisky casks brings a well-balanced flavour profile to the rum. It can be enjoyed over ice for a refreshing experience.
