Meet the Producers | Illicit Spirits | 2023

Illicit Spirits is an urban craft distillery with a hands-on fascination for boldly exploring and reinterpreting classic ideas, and a mission to make memorable, unique, contemporary drinks.

Launched in 2017 by Darran Edmond, Illicit Spirits are based in a repurposed railway arch in the Tradeston area of Glasgow and they embrace the city’s industrial heritage and DIY-ethos. Illicit strive to create memorable and unique spirits and while they look back on tradition with respect, they seek to break the mould with their contemporary creations.

All of their spirits are made by hand in small batches with a direct-fired copper pot still, and are aged on-site.

Illicit will have two rums on offer at this year's festival, and the first is their Lo-Fi White Rum. Made from organic molasses, this 100° proof pure single rum is unaged and unfiltered - a true representation of Illicit’s Lo-Fi approach to distilling. On the nose it is bubblegum, toffee popcorn and blackberry leaf. On the palate it is pineapple, bourbon biscuits and menthol.

Illicit also produces a single cask aged rum, which are hand distilled from 100% molasses with every cask aged on site in Glasgow. This rum is bottled without chill filtration and with no added colours or flavours. Allowing people to embrace the natural variance in the distilling and maturation process - each bottle is truly unique.
