Meet the Producers | Islay Rum | 2023

The Islay Rum Distillery based on the Scottish west coast, produces rums that draw inspiration from some of the most iconic distilleries throughout the world but with a distinct Scottish twist.

By using a combination of different types of molasses, multiple yeast strains and extended fermentation Islay Rum creates a bold, unaged pure single rum. Inspired by rums spanning from Haiti, Jamaica and the French West Indies this clear, pure spirit is full-bodied and is the base of their new Peat Spiced rum. Its ingredients are smoked over a peat fire to create an intense smoky flavour, reflecting its Islay roots.

Starting production at the beginning of 2022, Islay Rum is a new, but exciting player in the Scottish rum industry. Led by Ben Inglis, Head Distiller, the team is dedicated to exploring the possibilities of what Scottish rum can be, and are looking to explore new and innovative avenues of flavour creation. They believe in constantly evolving and strive to deliver the highest quality possible for their customers.
