What happens when you bring 32 diverse people together to create a new rum?

People are at the heart of Cabal’s ethos. We brought together whisky drinkers, spirit lovers, rum champions, liquid specialists and trade experts to experiment and sample until they had created our very first expression. Our rums are distinctive and flexible because they are developed and tested by both real people and industry experts. 

We always make our products together. We look at what people are currently loving, exploring and drinking across rum and spirits and use this to create new and exciting trial liquids from reputable industry suppliers and distilleries. We then talk through and test our trial samples together with our consumers, the trade and other industry experts.

We ask them to tell us what they like, what they don’t like, what they can detect to the nose and the palate, how, when and with whom they might serve and enjoy it.

We then create the preferred liquid working with our supply chain.

Cabal No.1513 is created using a combination of pot and column distillation techniques with rums from prominent distilleries in Guatemala, Guyana, Trinidad, Panama and the Caribbean, tropically aged at origin. It is then finished in Pedro Ximenez sherry casks, a process that adds natural sweetness. Only once we have sampled and are confident the liquid is a true representation of the taste and quality we expect, do we then bottle and package. Then it is ready for consumers to purchase, enjoy and share.
