Ryan, originally from Edinburgh, has worked in kitchens for nearly eighteen years. He started his career as a chef at Edinburgh’s, Dunstane House Hotel, which champions ingredients sourced from the Orkney Isles and beyond. It’s where he first learnt about the fantastic produce available from across Scotland.

Since then, Ryan has honed his craft in a variety of restaurants across the UK and Australia - including Edinburgh’s Restaurant Martin Wishart, The Samling Hotel in the Lake District, Le Gavroche in London and Anthony’s Restaurant, Leeds.

For the last eight years, Ryan has been away from the restaurant scene and has worked as a private chef for a family in South Yorkshire where he caters everything from daily meals for the family to high profile dinner events.

Between work and his general passion for food, Ryan has travelled the globe to experience different cultures and cuisines. He is delighted to join the Scottish Rum Festival team and create a menu that showcases some of the fantastic Scottish spirits into recipes of his own.

Ryan’s will be serving up a ‘Very Drunken Chicken’ and ‘Rum-infused pineapple with home-made banana ice cream, salted rum caramel and ‘boozy’ raisins on Friday 16th July.
