Holyrood Distillery is nestled in the heart of Edinburgh City Centre. Development started in 2017 and the distillery opened in 2019 with the initial focus on bringing whisky back to Edinburgh. Holyrood focuses on good quality spirit, incorporating Edinburgh's brewing heritage into their spirit! They achieve this by experimenting with the DNA of spirits, such as malts and yeasts in whisky production. However, whisky is not Holyrood's only specialty. Over the years they have branched out into creating an elevated gin, Height of Arrows, as well of course, as a high-quality blended rum.
The story of Elizabeth Yard Rum begins with their maturation warehouses at Royal Elizabeth Yard on the outskirts of Edinburgh. This site was once home to the old Royal Naval Rum Bonds, which supplied the Royal Naval fleet who had bases on the Firth of Forth in nearby South Queensferry and Rosyth. By returning rum maturation to the Yard, they revived a piece of Edinburgh’s rum history that had been lost when the Yard closed in 1996.
Elizabeth Yard Rum is an unconventional blend made from a distinct selection of rums sourced from three small independent distilleries across the globe, then finished at Elizabeth Yard in Edinburgh. They exclusively partner with rum producers who use 100% locally grown sugar cane. Their blend includes single estate molasses rum from the Philippines, high ester pot still rum from Ghana and aromatic cane juice rum from Vietnam. These rums are carefully selected for quality and blended for flavour, then triple cask matured in virgin American oak octaves, Oloroso sherry and Palo Cortado sherry casks. The result is a delicious combination of rich tropical notes, luxurious depth, and lingering warmth.
Elizabeth Yard Sherry Cask Edition bottle and label design pays tribute to the origins of Royal Elizabeth Yard and its relationship with the nearby Naval Bases on the Firth of Forth at South Queensferry. The bottle shape is reminiscent of an original Navy Rum flagon, while the vibrant pattern is inspired by the famous ‘Dazzle’ design – a pattern invented for, and applied to, naval ships as a unique form of camouflage. The accent colour for the Dazzle design is inspired by the flavour notes of the spirit, combined with hues of ‘Forth Bridge Red’.
Holyrood Distillery's mission is to source rare and exciting rums from across the world and finish them in the finest wood available. Elizabeth Yard Rums were created with the intention of managing rum maturation with a Scotch whisky maker’s mindset. The rums are treated with the same level of care as their single malt whisky, using quality casks typically reserved for Scotch whisky production.
