Meet the Producer | Pixel Spirits | 2021

Pixel Spirits is a craft distillery based in North Ballachulish in the West Highlands of Scotland. Founded by a husband and wife team Craig & Noru Innes in 2017, this distillery has been self converted from a traditional A frame barn with the help of various friends and family members - this is in the core of their values - hand crafted, bespoke and personal!

After trialling, testing and lots of recipe development over a period of almost two years, Pixel Spirits White Rum was finally released in April 2021. At the end of the same month, their new release was crowned the overall winner in the taste category of unaged rum, distilled in pot and column stills at the prestigious World Rum Awards 2021! 

Though some of their rum goes out as white rum to bars and shops for mixed drinks and cocktails, the majority goes into casks to age. After experimenting with a variety of casks from virgin American and European oak to former bourbon or Scotch Whisky casks, Pixel Spirits released a cask aged Golden Rum to their growing products list in May 2021 and it has been very popular indeed.

Pixel Spirits creates smooth and delicious spirits with full, vibrant flavours that are not lost in mixers or cocktails. These are real spirits, distilled, hand bottled and hand labelled in their distillery and created using the finest ingredients. No sugar or artificial colourings are added post distillation, any colour in the golden rum for example is drawn purely from the casks it is rested in.

These spirits are truly small batch, all bottled and labelled by hand. Craig, the owner and Master Distiller at Pixel Spirits explains: "When we first started producing rum, we had a couple of small fermenters and a 100 litre still. The process is still slow and hands on but by adding a larger 500L still at the end of 2020 we can now produce 35 litres of rum per month. It is truly a tiny amount and it is hard to keep up with demand but at least it is genuine Scottish Rum and keeps our customers wanting more. As we grow we have started filling a variety of different casks of different sizes to have different expressions moving forward. Aside from this we have been setting some white rum aside to distil once again with select botanicals to create a Botanical Rum, which we hope to release soon!"

As the amount of rum they distil is so small and rare, it is bottled under the Pixel Spirits Artisan Range label as limited editions, until such a point that enough of their casks, that they have been filling over the last few years, reach suitable maturity.
