Island Slice Rum was founded by Sylvester Herman, a passionate rum maker who grew up in a family with a rich rum-making tradition on the shores of Saltibus, St. Lucia.
Sylvester's love for rum began in his childhood, watching his father distill and sell homemade rum. His journey took him from St. Lucia to the United States Department of Defense, and later to the British Army. In 2013, Sylvester found himself in Scotland, where he was inspired to create a rum that truly captures the essence of the Caribbean.
Combining his family's rum-making legacy with his own vibrant spirit, Sylvester established Island Slice in 2015. The distillery, located in Dalreoch, Dumbarton - affectionately known as 'Rumbarton,' stands as a testament to Sylvester's dedication to blending the authentic flavours of St. Lucia with the unique Scottish landscape.
Island Slice have four distinct types of rum that will transport your taste buds straight to the Caribbean: White Rum, Spiced Rum, Scotch Bonnet Rum and Dark Rum.
Island Slice offers a laid-back dark rum that embodies indulgence and sophistication, based on a St Lucian family recipe passed down through four generations. This dark rum features a rich toffee aroma and taste, complemented by notes of aged cedar humidor on the palate. Aged to perfection, the influence of specially selected Speyside whisky casks imparts a well-balanced flavour profile. It’s perfect for enjoying over ice for a refreshing experience.
