Meet the Producer: IslandSlice | 2021

IslandSlice Rum is distilled in Dumbarton, Scotland by head distiller and company founder, Sylvester Herman.

After leaving his home - the beautiful Caribbean Island of St. Lucia in 2000 - Sylvester was privileged enough to explore various countries and experience different cultures. The adventurer inside him enjoyed every experience but still a small part was missing and that was the flavours and taste of home. Fast forward a few years, and Sylvester had turned his Mama’s Punch (that she’d made for him and his siblings as children) into an alcoholic version, using rum.

His passion and love for the spirit goes into every segment of Sylvester’s work, and every aspect of the production process is done to pay homage to his homeland.

IslandSlice uses the production processes of Sylvester’s forefathers in St Lucia - even down the the small 4 x 120 litre pot stills that are custom-designed by Sylvester himself to closely replicate his Father’s homemade still. Crossed with the knowledge harnessed by the Scots in Whisky production, IslandSlice is a Caribbean-style rum produced in Scotland.

IslandSlice distillate is derived from fermented cane molasses and cane sugar. The process also includes dander and muck being added to the fermenting process to increase our flavours and to deliver that genuine Caribbean funk with every sip.

The IslandSlice portfolio currently features four products:

IslandSlice Spiced Rum: A masala chai spiced rum, containing no vanilla, no colourings and no sugar (there is a small amount of honey added though!).

IslandSlice Dark Rum: A smooth blend of vat-aged premium rum. A warm, rich and complex flavour with hints of smoky caramel.

IslandSlice White Rum: A premium, handcrafted white rum, blended and filtered to create a distinctive, smooth and flavourful rum with hints of ripe banana, a natural sweetness of sugarcane and a slight hint of aniseed.

Coconut Rum Liqueur: IslandSlice white rum blended with coconut flavours to create a refreshing, distinctive tropical taste with a blast of coconut sweetness. The perfect mix for exotic cocktails, fruit juice or just over ice.
